Vegan Chocolate Chia Pudding

This delicious Vegan Chocolate Chia Pudding makes for a decadent weekend breakfast or wholesome dessert. Chia seeds are an excellent source of dietary fibre and omega-3 essential fatty acids which are important for managing healthy cholesterol levels and reducing the risk of heart disease. Avocadoes are rich in vitamin E and beta-carotene, both potent antioxidant nutrients that help prevent the oxidation of cholesterol which helps reduce the risk of atherosclerosis.

Vegan Chocolate Chia Pudding

Chia Pudding:
¾ cup coconut milk
¼ cup chia seeds
1 Tbsp maple syrup or coconut nectar
1/2 tsp vanilla extract
Chocolate pudding:
1 large ripe avocado
2 heap Tbsp raw cacao powder
3 Tbsp coconut milk
2 heap Tbsp maple syrup or coconut nectar
1/2 tsp vanilla extract
Toppings: berries, grated vegan chocolate, coconut flakes


 

Method:

  1. Place chia seeds in a small bowl and mix with ¼ cup of water. Let sit until a gel like consistency forms.
  2. Stir through coconut milk, maple syrup and vanilla extract. Cover and place in the fridge overnight or for 4 hours.
  3. Place all chocolate pudding ingredients into a food processor and blend until you have a smooth creamy consistency.
  4. Spoon chocolate pudding into 2 serving glasses. Top with chia pudding and then top with berries and other desired toppings.

Serves 2.
