Flourless Orange Cakes

These gorgeous moist flourless orange cakes make a perfect nourishing treat with a cup of tea. Oranges are a wonderful source of the antioxidant vitamin C which is vital for collagen production for healthy, youthful looking skin. Vitamin C is also important for adrenal gland function and to strengthen immunity. You will also get plenty of protein from these delicious cakes to help stabalise blood sugar levels and help curb cravings.

Flourless Orange Cakes


3 large organic oranges
4 organic eggs
½ cup honey or maple syrup
3 cups almond meal
2 tsp baking powder
1 ½ tsp vanilla bean extract
Topping:
250g organic white chocolate
Dried orange pieces to decorate


Method:

  1. Preheat oven to 170*C. Grease and line a 12-hole cupcake tin.
  2. Place whole oranges in a large saucepan covered with water. Bring to the boil and reduce to a simmer for 40 minutes. Drain oranges when done and allow them to cool.
  3. Place oranges, eggs, honey, almond meal, baking powder and vanilla extract in your food processor and blend until smooth and well combined.
  4. Pour mixture into cup-cake holes and bake for 40 minutes or until cooked through. Allow your cakes to cool completely before adding the topping. You should have more batter left to make some more cakes.
  5. To melt your chocolate bring a small saucepan with around 2 inches of water to boil, then reduce to a simmer. Place a heatproof bowl over the top of the pan so it fits snuggly and doesn’t touch the water. Add your chocolate and stir until melted.
  6. Turn cakes over and top each one with melted chocolate so it runs down the sides. If you cakes are uneven trim the bottoms so they sit flat.

Makes around 16 small cakes.
