Gluten-Free Apple Cake

Gluten-free vanilla honey cake

This delicious super moist gluten-free apple cake made with oats, almonds and apples is packed full of dietary fibre. It's important to include adequate amounts of fibre in your daily diet to help support cardiovascular function and healthy cholesterol levels. Oats contain beta-glucan which is a type of fibre that helps reduce high cholesterol levels. You also need fibre to promote good digestion and bowel health. Fibre passes undigested into the bowel were it’s broken down and fermented by gut bacteria which produce short chain fatty acids (SCFA), namely butyrate and acetate. These SCFA are the main energy source for intestinal cells and act as a prebiotic helping to stimulate the growth of beneficial gut microbiota.

Gluten-Free Apple Cake


¾ cup grated apple, peeled and loosely packed (approx. 2 small apples)
1 organic egg
1 ½ tsp vanilla essence
½ cup milk of choice
1/3 cup smooth 100% almond butter
1/3 cup raw honey or pure maple syrup
3/4 cup gluten-free rolled oats (make into flour)
1 1/3 cup almond meal
11/2 tsp baking powder


Method:

  1. Preheat oven to 180*C and grease and line a 8 x 8 inch round cake tin with baking paper..
  2. In a large bowl whisk the egg with milk, vanilla, almond butter, and honey.
  3. In another bowl combine oat flour, almond meal, and baking powder.
  4. Pour wet ingredients into dry and gently combine. Stir through grated apple.
  5. Spoon mixture into your cake tin.
  6. Bake for 35 mins or until a skewer comes out cleanly from the centre.

TEA PAIRING: This delicious cake goes beautifully with a pot of Bodhi Organic Masala Chai or Black BeauTEA.
