Vegan Lime Avocado Tart

These gorgeous creamy vegan lime avocado tarts are rich in important nutrients needed for optimal health. Avocadoes are an excellent source of the antioxidant vitamin E and beneficial monounsaturated fats which are essential for healthy cholesterol levels and good cardiovascular function. Avocadoes also provide vitamin K for healthy blood clotting and strong bones.

Vegan Lime & Avocado Tarts


Base:
5 Medjool dates, remove pits
2 heap Tbsp desiccated coconut
1 cup almond flour
Filling:
Flesh of 1 large avocado
3/4 cup coconut cream
Juice and zest of 1 lime
2 tbsp pure maple syrup or coconut nectar
1 tsp vanilla extract


Method:

  1. Place all base ingredients in a food processor and pulse until well combined and your mixture is sticking together.
  2. Spoon base mixture into 4 medium tart tins and press it down with the back of a fork. With your fingers press the mixture up the sides of the tins. Place your base in the freezer while you are making the filling.
  3. Place all filling ingredients (except zest) in a food processor and blend until you have a smooth creamy consistency. Gently mix zest through then pour mixture over the bases. Put back in the freezer for a couple of hours or until set.
  4. Decorate with lime slices, coconut flakes or lime zest.
  5. Let the tarts sit out of the freezer for 5-10 minutes before serving so they soften a little.
