Lemon + Honey Olive Oil Cake
1 1/4 cup almond flour
¼ cup coconut flour
¼ cup virgin olive oil
4 organic eggs
1/3 cup raw honey
2 tsp baking powder
Juice and zest one lemon
1 tsp vanilla bean paste or extract
- Preheat oven to 170*C and grease a 8 inch round cake tin.
- In a large bowl whisk the eggs with vanilla, olive oil, lemon juice and zest, and honey.
- In another bowl combine almond and coconut flour with baking powder.
- Pour wet ingredients into dry and gently combine.
- Spoon mixture into your cake tin.
- Bake for 35-40 mins or until a skewer comes out cleanly from the centre.
