This delightfully moist Lemon + Honey Olive Oil Cake is packed with goodness. Lemon + Honey Olive Oil Cake

1 1/4 cup almond flour
¼ cup coconut flour
¼ cup virgin olive oil
4 organic eggs
1/3 cup raw honey
2 tsp baking powder
Juice and zest one lemon
1 tsp vanilla bean paste or extract


  1. Preheat oven to 170*C and grease a 8 inch round cake tin.
  2. In a large bowl whisk the eggs with vanilla, olive oil, lemon juice and zest, and honey.
  3. In another bowl combine almond and coconut flour with baking powder.
  4. Pour wet ingredients into dry and gently combine.
  5. Spoon mixture into your cake tin.
  6. Bake for 35-40 mins or until a skewer comes out cleanly from the centre.
