Grilled Pistachio Peaches with Coconut Yoghurt

This simple yet tasty dessert is a great source of vitamin C and beta-carotene, which are both important nutrients needed for healthy immune function and skin health, along with helping reduce inflammation in the body. Coconut yoghurt is full of beneficial bacteria that helps improve digestion and gut health. It also contains healthy fats that are a good source of energy for the brain and body.

Gluten-free and dairy-free.

Grilled Pistachio Peaches with Coconut Yoghurt


2 peaches, cut in half and de-seeded
1-2 tablespoons raw honey
Handful of roughly chopped pistachios
Coconut yoghurt

Method:

  1. Place peaches cut side up on a baking tray.
  2. Drizzle with honey and place under the griller.
  3. Cook for around 4-5 minutes until they are cooked through.
  4. Top with pistachios and serve with yoghurt.
