Bircher Muesli

This hearty breakfast is a perfect way to start the day with a cup of tea. It's loaded with heart healthy dietary fibre and important nutrients like B vitamins, vitamin E and iron. Oats are rich in beta-glucan, a type of soluble fibre that’s beneficial for reducing cholesterol levels and lowering the risk of heart disease.

Bircher Muesli


½ cup rolled oats
½ cup almond or coconut milk
½ tsp ground cinnamon
2 heap tbsp Greek or coconut yoghurt
1 small apple, shredded, leave skin on
Large handful mixed berries (blueberries, raspberries, strawberries)
1 passionfruit, halved
Handful flaked almonds


Method:

Soak oats, cinnamon and milk overnight.
Stir through yogurt, berries, shredded apple, and nuts.
Serve with ½ a passionfruit.

Serves 2.
