Chocolate Muesli Bars

These tasty 'Chocolate Muesli Bars' make a nutritious snack or afternoon treat with a cup of Bodhi tea. Oats are packed with heart healthy dietary fibre and nutrients such as B vitamins, vitamin E and iron. Oats are an excellent source of soluble fibre, which has been scientifically proven to lower total cholesterol and ‘bad’ LDL cholesterol, which helps reduce the risk of heart disease. Oats also provide you with slow release complex carbohydrates to fuel your mind and body. Nuts, seeds and eggs are excellent sources of protein, to supply our body with important amino acids required for repair and growth in the body. Having a protein and fibre-rich snack like this will help keep you satisfied until your next meal, and will help to curb unwanted sugar cravings.

Chocolate Muesli Bars


1 1/4 cup rolled oats
½ cup shredded coconut
½ cup diced medjool dates, pitted
¼ cup pumpkin seeds
¼ cup sunflower seeds
2 tbsp flaxseeds
¼ cup nuts (almond, macadamia, cashew, walnut), roughly chopped
¼ cup cold pressed coconut oil
½ cup almond meal
3 organic eggs
¼ cup maple syrup
80g good quality dark chocolate or carob


Method:

  1. Preheat oven to 180*C and line a small slice tin with baking paper.
  2. Press mixture down into the tin and bake for 35 minutes or until golden brown.
    Allow it to cool before cutting into 12 bars.
  3. Melt your chocolate or carob in a water bath and drizzle over your muesli bars with a spoon.
  4. Place your bars in the fridge until ready to eat.
